This online French Desserts class is dedicated to all things pâte à choux. The choux pastry dough is just one of those classic French recipes that you should master. Used in applications both savory and sweet, it is a perfect partner for cocktails and birthdays, and just for a treat. We’ll teach you recipes from the basics (cream puffs), to the extravagant (croquembouche), and pass by the Paris-Brest, and Saint-Honoré along the way. You’ll learn this versatile French pastry dough recipe and some of the sweet ways you can enjoy it. This is the same dough and technique needed to make éclairs, chouquettes, gougères, the Paris-Brest, Saint-Honoré, & more. Perfect your skills in this introduction to choux pastry dough.

Tools needed: Metal pastry ring or a large plate (for tracing), Rubber spatula, Hairdryer or blow torch (optional), Whisk, Food processor, Candy thermometer, food processor, Stand-up or hand-held mixer, Piping bags, Plain pastry tip, Small star tip (10mm – or whatever you have)

Note: We, of course, prefer that you attend classes LIVE. But if you are unable to attend the LIVE class, you can also select to watch the recording so that you may follow along on your own. You can always email the chef to ask your questions.
