Hello David, I have sent you an email in response to your review where I was very sad to see that you were so disappointed by the class. As I said in my reply, we greatly appreciate any and all feedback from our participants. While we have been offering French cooking classes in Paris since 2007, our online classes are quite new. Born of the pandemic and something that we continue to shape and adjust. Our primary goal is to ensure that participants feel comfortable with the recipe to be able to follow along on the Zoom lesson and subsequently redo on their own either solo or using the video recording from the class. While I didn't say this in the email to you, this may also be why the chef would be going through each step with you in a somewhat methodical way. So that when you review the video it has more than just entertainment value. The meringue for this class was and is optional but as there were people in the class who wanted to do the meringue, our chef had to go through those steps but I am sorry that you may have been left out since you were not doing it. It could just have easily been a class where no one wanted to do it. You mentioned that you didn't get your ingredients prepped for the class - we stress how important this is, particularly for baking to have your "mise en place" ready so that you can enjoy the class and not be stressed about it during the lesson. I hope that everyone can see that these Zoom classes though quite different from an in-person experience do have more value than simply watching a YouTube video where you don't have the benefit of a LIVE instructor to whom you can ask questions and interrupt should you be challenged by something. I would love for you to return for another class and give us a second chance. This brave new world we have entered is challenging for everyone. It is not easy for the chef to both ensure he or she provides an informative lesson while not missing out on anyone from their various locations and entertain everyone simultaneously but we try. It is also not easy for the participants to wrap their heads around this new way of learning, where listening, looking, and understanding are all being done through an artificial device. But everyone is trying. We'll take into account all of your feedback and hope to improve on the quality of our offering. Once again, many thanks.
