Some of what you will discover will surprise you—and leave a lasting impression.
This is more than just another Peru food tour—it’s a deeper connection to Peru’s culinary and cultural legacy.
Peruvian cuisine is a celebration of flavors, traditions, and influences, blending indigenous, Spanish, African, Chinese, and Japanese elements into something truly unique. During this culinary and cultural holiday, you’ll not only learn to prepare a few of Peru’s iconic dishes but also experience the country’s diverse culinary treasures.
Here’s a taste of the Peruvian dishes and flavors that await you:
- Ceviche: Peru’s national dish, made with fresh fish marinated in lime juice, onions, and a touch of chili. The citrus “cooking” of the fish creates a delicate, vibrant flavor.
- Lomo Saltado: A stir-fry of tender beef strips, tomatoes, onions, and soy sauce, showcasing Peru’s Chifa (Chinese-Peruvian) influence. Served over French fries and rice, it’s the ultimate comfort food.
- Aji de Gallina: A creamy chicken stew with a base of Peruvian yellow chili peppers, cheese, and bread, served with rice and boiled potatoes. Comforting and flavorful.
- Causa Limeña: A layered dish of mashed yellow potatoes (seasoned with lime and chili), filled with avocado, chicken, or tuna. It’s as beautiful as it is delicious.
- Anticuchos: Skewers of marinated beef heart or other cuts, grilled to perfection and typically served with potatoes and spicy sauces. This dish reflects Peru’s African influence and is a must-try street food.
- Tacu Tacu: A hearty dish of rice and beans pan-fried together, often topped with fried eggs, steak, or seafood. Born out of ingenuity, this dish is both filling and packed with flavor.
- Picarones: Peru’s answer to donuts—sweet potato and squash fritters served with a rich syrup made from chancaca (a type of unrefined sugar).
- Chifa Cuisine: A blend of Chinese and Peruvian flavors, try dishes like arroz chaufa (Peruvian fried rice) and wontons with a local twist.
- Nikkei Cuisine: Japanese-Peruvian fusion at its finest. Sample dishes like tiradito, a cousin of ceviche, featuring raw fish thinly sliced and topped with flavorful sauces.
We will be preparing some of these dishes during our three hands-on cooking classes, learning the secrets of Peruvian culinary traditions under the guidance of expert chefs.
Whether it’s savoring fresh ceviche at a market stall, crafting lomo saltado in a cozy kitchen, or sampling chifa and nikkei creations, your taste buds will embark on a journey as rich and diverse as Peru itself.
