Italian Gluten-Free Fried Cream: Carnival Sweets (Crema Fritta)

This Gluten-Free Fried Cream, a classic Italian Carnival sweet, offers a delightful taste experience with its creamy center and crispy exterior. Made with gluten-free ingredients like rice flour and coconut biscuits, it's a perfect treat for those with gluten sensitivities, ensuring everyone can enjoy the festive flavors of Carnival.

Equipment

  • Bowl, Whisk, Stove, Rectangular Steel Ring or Baking Tin, Baking Paper, Knife, Frying Pan, Kitchen Paper.

Ingredients

  • 500 Grams Milk
  • 150 Grams Sugar
  • 125 Grams Wholemeal Rice Flour see note 1
  • 50 Grams Chopped Le Veneziane Coconut Biscuits see note 2
  • 50 Grams Almond Flour see note 1
  • 25 Grams Corn Starch see note 1
  • 5 Eggs
  • 1 Vanilla Pod
  • Grated Rind of 1 Lemon
  • Frying Oil
  • Icing Sugar see note 1
  • Flour for Coating see note 2

Instructions

  • Heat the milk with the vanilla pod and grated lemon peel. Once infused, allow to cool and strain.
  • In a bowl, whisk together the milk, sugar, 1 egg yolk, and 2 egg whites. Gradually add the rice flour and corn starch, stirring continuously.
  • Cook the mixture over medium heat until it thickens into a cream. Let it cook for a few minutes, stirring constantly.
  • Pour the cream into a rectangular steel ring on baking paper or a lined baking tin. Allow to cool and set, approximately 2 hours.
  • Once set, cut the cream into cubes. Coat each cube first in flour, then in beaten eggs, and finally in a mixture of biscuit and almond flour.
  • Fry the cubes in hot oil until golden brown. Drain on kitchen paper and dust with icing sugar before serving.

Notes

note 1: For gluten-free preparation, ensure that the rice flour, almond flour, and corn starch are certified gluten-free.
note 2: For the gluten-free version, use gluten-free coconut biscuits and gluten-free flour for coating.
To adapt this recipe for a non-gluten-free version, replace the gluten-free biscuits and rice flour with standard wheat flour and regular biscuits.
